CABOT CLOTH BOUND CHEDDAR Vermont, United States

This cooperative located in the hills of Vermont has been producing world class cheddars. It is made with pasteurised milk, the flavour notes that are those normally attributed to raw milk. A beautifully balanced cheese with a rich fruitiness and a full-bodied buttery texture. It finishes with a lingering nuttiness and caramel sweetness.

ROUZAIRE FROMAGE DE MEAUX
Ile-de-France (Seine-et-Marne), France
Rouzaire Fromage de Meaux is a refined white mould cheese with a balanced appearance and sweet smell.  The rind on younger cheeses should be white and velvety and has a slight aroma of mushrooms. The interior is compact and even-textured with the colour of straw. The flavour is rich and condensed, showing slightly sweet and even smoky elements.


ST AGUR BLU Rhône-Alps, France

Our favorite blue cheese. The addition of cream during production creates a lusciously soft and creamy cow’s milk blue that is mild in flavour, ideal for those who say they don’t like blue cheese. It is made from pasteurised cow's milk, enriched with cream, and contains 60% butterfat, qualifying it as a double-cream cheese.
